We compare carbon steel pans on the specifications that actually change how they cook, and we say plainly when a pan is not worth its price. This page explains what we measure and how we reach a recommendation, so you can judge whether our conclusions are worth anything.
What we measure

Where our specifications come from
Every figure on this site is taken from the manufacturer or retailer listing for that exact product and recorded with the date it was checked. Where a manufacturer does not publish a figure, we leave the cell blank rather than estimating. You will see a lot of blank cells, and that is deliberate — an invented number is worse than no number.
How we form a recommendation
We do not rank pans one to ten, because the best pan genuinely depends on what you cook and what hob you own. Instead we label picks by the job they do: the pan for most kitchens, the pan for the smallest budget, the pan for stove-to-oven work, the pan for batch cooking.
What we will not do
- We will not pretend every pan is good. Where a product has a known weakness we say so, including on products we earn commission from.
- We will not hide the drawbacks of the category. Carbon steel rusts, sticks while young, and cannot handle acid. If that rules it out for you, we would rather you learned it here than after spending $120.
- We will not reproduce manufacturer marketing copy. Every description on this site is written from the specifications, not copied from the brand.
- We will not let commission decide the recommendation. The cheapest pan in our frying pan guide is one of our top picks precisely because it earns us the least.
