Description
Blue carbon steel refers to a heat treatment that leaves a blue-grey oxide layer on the surface. That layer resists rust and gives seasoning something to bond to, so the patina builds faster and holds better than on plain steel.
At 15-gauge this is heavier than the budget woks in this range, and that thickness changes how it cooks. It holds temperature when a batch of cold vegetables goes in rather than stalling, which is the single most common failure in home stir-frying — the pan drops below searing temperature and the food steams in its own moisture.
Completely uncoated, so the non-stick behaviour is entirely down to the seasoning. There is nothing on this wok that can flake into your food.
Best for: someone who already stir-fries regularly and has hit the limits of a thin wok.
