Description
Mauviel has been making cookware in Normandy since 1830, and the M’Steel line is the carbon steel counterpart to the copper the company is better known for. The steel here is noticeably thicker than most competitors, which shifts the pan’s behaviour toward cast iron: slower to heat, but far more stable once it is there, and much less prone to dropping temperature when cold protein hits it.
The bottom diameter of 8.4 inches on an 11-inch pan tells you it has real sloping walls. That is a good shape for tossing and for reducing pan sauces, less good if you want maximum flat searing area for the overall size.
The iron handle gets hot. Keep a towel to hand and do not grab it absent-mindedly. It does mean the pan goes into the oven at any temperature without concern.
Best for: cooks who want cast-iron-like heat stability without cast-iron weight.
