Safety notice: April 2024 French recall. French regulators (DDPP of Isère) recalled specific production lots of Matfer Bourgeat Black Steel skillets after testing found arsenic, chromium and iron leaching above European Union limits when a mild acidic solution was heated in the pan. Matfer has appealed and states its pans meet French and EU standards.

The pans were not recalled in the United States, because the US sets no enforceable limit on metal release from cookware. Matfer has not withdrawn the affected lots from the American market. America’s Test Kitchen investigated for several months and withdrew its recommendation, stating it cannot recommend skillets that potentially contain arsenic while alternatives exist.

Affected lot numbers: 12" — 1102305, 1103862, 1104661, 1104677, 1104678, 1104679, 1104719, 1104725. 10" — 1108748. 8" — 1104663, 1104664. The lot number is printed on the packaging label.

The rivet-less handle is the entire argument for this pan. Every riveted skillet has two or three metal studs protruding into the cooking surface, and food and oil collect around them. Matfer welds the handle instead, leaving a completely uninterrupted interior. It wipes clean in one pass, and there is no rivet to loosen over a decade of use.

This is professional kitchen equipment sold to home cooks rather than a consumer product dressed up as professional. The steel is uncoated high-carbon, the finish is plain, and there is no marketing gloss on it. It is heavy at 4.3 lbs for an 11-inch pan, which is the cost of that solid construction.

It arrives with a protective beeswax coating that must be scrubbed off before the first seasoning. Skip that step and nothing will stick properly.

Best for: cooks who care more about how a pan is built than how it is presented.
