Description
Lodge built its name on cast iron, and this skillet is the useful counterpoint to it. At just over three pounds it is roughly half the weight of the equivalent cast iron pan, and the thinner 12-gauge steel responds to heat changes in seconds rather than minutes. If you have ever overshot a temperature in cast iron and had to wait for it to come back down, that is the problem this pan solves.
There is no coating of any kind. The non-stick behaviour comes entirely from seasoning you build yourself, which means it cannot chip, flake or wear out the way a coated pan does. It also means the pan will stick until you have put the work in.
Note the 500°F ceiling — lower than the 1200°F some competitors advertise. For searing, sautéing and oven finishing that is ample; for open-fire cooking, choose accordingly.
Best for: cast iron users who want the same durability with faster temperature control.
