Description
The two extra inches over the 10-inch model change what the pan is for. A 10-inch skillet cooks for one or two people; this one handles a family dinner, and more importantly it gives you room to sear without crowding. Crowded protein steams instead of browning, which defeats the entire point of owning carbon steel.
Same 12-gauge construction and same steel handle as its smaller sibling, so it goes in the oven without restriction. The trade-off is weight and balance — a 12-inch carbon steel pan with a long handle has real leverage on your wrist when it is full.
The soybean oil pre-seasoning is a starting layer, not a finished patina. Cook bacon in it a few times before you judge it.
