What NOT to Cook in a Carbon Steel Pan

Do not cook acidic food, sugary food or delicate fish in a carbon steel pan, and avoid long simmers of any kind. Acid dissolves seasoning, sugar tears it off, and delicate proteins break apart on a surface that has not fully matured.

Acidic food
The main rule, and the one with no workaround.
Citric and malic acid dissolve polymerised seasoning. Once the layer is breached the acid reaches bare iron, which transfers into the food and produces a metallic taste.
Avoid: tomato sauce, wine reductions, vinegar-based sauces, lemon-heavy dishes, anything braised in acid.
Acceptable: a quick deglaze with wine, provided you get the liquid out fast. A squeeze of lemon over food at the end, off the heat.
Duration matters more than acidity. Thirty seconds of wine in a hot pan is fine. Thirty minutes of tomato is not.
Sugary food
Less discussed and just as damaging.
Melted sugar bonds to the seasoning layer. As it cools and hardens it grips, and removing it takes seasoning with it in sheets.
Avoid: caramel, toffee, candied nuts, heavy sugar glazes, sticky barbecue sauces reduced in the pan.
A glaze added at the end and served immediately is survivable. Reducing sugar syrup in the pan is not.
Delicate fish
A qualified no. This one depends on your pan.
Sole, flounder, tilapia and thin white fillets fall apart on a pan whose seasoning has not matured. Firmer fish handles it, and skin-on salmon is actively good in carbon steel because the skin releases cleanly once crisp.
Wait until the pan is mature, then start with skin-on and firm-fleshed fish.
Long simmers and braises
Extended contact with liquid softens seasoning even without acid. Carbon steel is built for high, dry heat.
Use enamelled cast iron or stainless for anything simmering more than twenty minutes.
Eggs, before the pan is ready
Not permanently off the menu. Just not in week one.
Eggs need a mature surface. On a new pan they weld on, which is discouraging enough that people conclude the pan is faulty. Give it ten to fifteen cooks first.

If you cook the wrong thing
The pan is not ruined. Nothing here is permanent.
