How to Remove Rust From a Carbon Steel Pan

To remove rust from a carbon steel pan, scrub it with a 1:1 paste of coarse salt and neutral oil, or use steel wool for heavier patches, then wash, dry on the hob and reseason immediately. Rust on carbon steel is cosmetic. Every rusted pan is recoverable.

Why carbon steel rusts
Carbon steel is roughly 99% iron. Iron plus oxygen plus water produces iron oxide, which is rust. There is no chromium in the alloy to prevent it, which is the trade you make for a surface that can become non-stick.
Seasoning is the only barrier. Where the seasoning is thin, damaged or absent, moisture reaches bare iron and rust starts within hours.
Common causes: left in the sink, put away damp, air dried on a rack, stored in a humid cupboard, or nested against another pan with moisture trapped between.
How to remove it
Work up in stages. Start with the gentlest method that might work.
Light surface rust: salt and oil
- Pour roughly equal parts coarse salt and neutral oil into the pan.
- Scrub in circles with a paper towel or cloth, pressing firmly.
- Keep going until the orange is gone.
- Wipe out, wash with hot water and soap, dry on the hob.
- Reseason at once.
Salt is abrasive enough for rust and soft enough to leave good seasoning alone.
Heavier rust: steel wool
Steel wool, a scouring pad or fine sandpaper. Be as aggressive as you need to be. You cannot damage the steel, only the seasoning, and that is rebuildable.
Work until you see clean grey metal. Do not stop at brown.
Stubborn or pitted rust: vinegar
- Mix equal parts white vinegar and water in the pan.
- Bring to a simmer for three to five minutes.
- Tip it out and scrub while warm.
- Wash, dry, reseason immediately.
Do not leave vinegar sitting in the pan. Acid that removes rust will also start etching the metal underneath if you give it hours.
Reseason straight away
This is the step people skip and then wonder why the rust came back within a week.
Rust removal always takes seasoning with it. What you are left with is bare iron, which will flash rust in minutes in a humid kitchen.

How to stop it coming back
- Dry on the hob, not on a rack. Low heat, one minute, until every trace of water has gone.
- Oil while warm. A thin film, wiped back so nothing pools.
- Never soak. Not even for ten minutes.
- Never use the dishwasher.
- Store with airflow. Paper towel between nested pans.
- Consider nitrided steel if you keep making these mistakes. It is far more rust-resistant.
Is a rusty pan safe to use?
Once cleaned and reseasoned, yes. Iron oxide in the small quantities involved is not considered harmful, and the pan you end up with is chemically identical to a new one.
Do not cook on visible rust. Clean it first. That is about food quality and taste rather than acute danger.
Pitting is the one thing to watch. If rust has eaten deep enough to leave visible craters that survive cleaning, the pan will never season evenly there. It remains usable but it will always be a weak spot.
