A sticky carbon steel pan is almost always caused by too much oil during seasoning, oil that never reached its smoke point, or seasoning that has not built up yet. All three are fixable in an afternoon. None means the pan is ruined.

First, which kind of sticky?

Two different problems get called the same thing, and the fix is different for each.

Tacky when cold, before you cook. The pan feels gummy to the touch straight from the cupboard. This is a seasoning problem.

Smooth when cold, but food sticks while cooking. The surface feels fine but eggs weld on. This is a technique or maturity problem.

1. Too much oil

The most common cause by a wide margin.

Seasoning polymerises only in a very thin film. A thick coat sets on the surface while the layer underneath stays soft, which is exactly the tacky feeling you get.

Fix: scrub the tacky layer back with coarse salt and a little oil on a paper towel. Then reseason with far less oil than feels right, wiping the pan until it looks almost dry. Method in how to season a carbon steel pan.

2. The oil never smoked

Oil has to pass its smoke point to polymerise. Heat it gently and you get warm oil that cools into a sticky film rather than a hard one.

If your kitchen never smelled of smoke while seasoning, the pan never got hot enough.

Fix: use a neutral high smoke point oil, grapeseed, canola, sunflower or avocado, and heat until the pan smokes steadily before holding it there. Butter and olive oil are poor seasoning oils for this reason. See best oil for seasoning carbon steel.

3. The seasoning is simply young

If the pan is not tacky cold but food sticks while cooking, nothing is wrong. A new pan is a new pan.

Factory pre-seasoning is one or two thin layers for transit protection, not a mature patina.

Fix: cook fatty things. Bacon, sausages, chicken thighs skin down. Each fatty cook adds a layer. Give it a few weeks before judging.

4. You did not remove the factory coating

New raw pans ship with lacquer or, on Matfer pans, heavy beeswax. If you seasoned over it, you bonded oil to wax rather than to steel.

Fix: scrub the pan back with hot water, dish soap and steel wool, then start seasoning from scratch. Note that pre-seasoned pans like Made In should not be stripped.

5. The pan was not preheated

Carbon steel needs a genuine preheat. Food dropped into a lukewarm pan bonds before the seasoning can release it.

What is not the cause
