What is a carbon steel pan good at?

What is it bad at?
Acid. This is the real limit and it is not negotiable. Tomatoes, wine, vinegar and lemon dissolve seasoning, and a long simmer will strip the pan back several layers and leave a metallic taste in the food. Common myths worth clearing up
You can never use soap. False. Modern dish soap does not touch polymerised seasoning. The myth is a holdover from caustic lye soaps that no longer exist in your kitchen.
Pre-seasoned means ready to use. Misleading. Factory seasoning is one or two thin layers for transit protection, not a finished surface. You still build the real patina yourself.
